- 1oz Simple Syrup
- 3/4 oz Lemon Juice
- 1.5 oz Earl Grey Infused Gin
- 1 egg white
- Some white sugar
Directions
First you must infuse the gin. It's about 4 tablespoons to one 750 ml bottle of gin. Place tea in gin. Wait 2 hours. Strain, preferably through a coffee filter or cheesecloth. The infused gin is shelf stable for basically forever.
Place syrup, lemon juice, gin and egg white in shaker. Dry shake for a bit. A dry shake is when you shake without ice. This is to get your egg white to break up and produce some good foam. Or, if you're feeling fancy, use a hand blender to get that good good foam.
Put ice in shaker, shake real good strain into sugar-rimmed glass.
Put it in your face.
