Lavender Blueberry Shrub (Fast)

My mother-in-law got me a book on shrubs, so I finally got around to making one. What's a shrub? In this case, it's a drink made from fruit, sugar and vinegar. Yup, vinegar. Making a shrub usually takes at least a couple of days. Well I'm terrible at planning, and I wanted to make a shrub in a night. So time to add some (optional) science. I mean, you could just wait, and that's probably wise.

Hardware

  • Whipped cream siphon (or just a sealed container)
  • Wire mesh strainer

Software

  • 2 cups Blueberries
  • 1 cup Sugar
  • 1 cup Apple cider vinegar
  • 2 tsp Dried lavender buds
  • Soda water

Directions

Add some violence to the blueberries. They have thick skin and so you need to muddle, crush, or chop the berries in order for an infusion to work. Put all the ingredients except soda water in your sealed container. Wait two days. Strain solids out with wire mesh strainer. The resulting liquid is your shrub concentrate.

Wait, I promised speed! Also just a note, this is actually kindof a terrible idea. Your siphon will absolutely be jammed with blueberry and lavender solids. Half the recipe and shove it all into a whipped cream siphon. Charge the siphon with a nitrogen charger. Shake and wait 20 minutes. Depressurize the whipper by discharging the gas into an upturned glass held over a bowl. It should be mostly gas, but some fluid will likely come out as well. After the siphon is appropriately depressurized, unscrew the lid and strain the mixture as in the above paragraph.

Fill a glass with ice. Throw about an ounce and a half of your shrub concentrate into the glass and fill with soda water. Boom. It's fruity and delicious.
